Cultivating olive trees is one of the oldest agricultural activities, demanding dedication, precision, and passion. This process involves stages such as fertilization, pruning, continuous care, and finally, harvesting. Olive Oil Production Process

Unlike many vegetable oils that require chemical refining processes, olive oil can be consumed directly without extensive industrial operations. Due to its natural nature, maintaining oil quality at every stage—from olive harvest to final packaging—is of special importance.

Along the way, every part of the production chain—from farmers and oil mills to packers and distributors—plays a key role in preserving quality. The ultimate goal is to produce excellent oil with superior characteristics; separating high-quality oils from lower-quality types is also always considered.

Olive Harvesting

The production process begins with harvesting olives. The harvesting method directly affects the yield and the final oil quality. Harvesting methods include mechanical equipment such as trunk and branch shaking systems (Vareo), or manual harvesting with wooden sticks. Although manual beating can damage the fruit and reduce oil quality, therefore today mechanized methods are preferred.

After harvesting, the olives are separated based on type and quality and are transported in suitable containers or directly sent to the factory to prevent possible spoilage.

Olive Crushing and Grinding

Upon arrival at the factory, the first step is to separate branches and leaves from the fruit using air blowing. Then, olives are washed and prepared for grinding. This stage must be completed within 24 hours of harvest to prevent fermentation or oxidation.

In the past, stone mills were used for crushing, but nowadays hammer crushers have become common, which break down the olive cell structure and prepare a uniform paste for further processing.

Olive Malaxation (Mixing)

The next stage is malaxing. In this process, the olive paste is gently mixed to allow the tiny oil droplets to coalesce and prepare for extraction. This crucial step activates the natural enzymes of the olive, increasing extraction efficiency.

Oil Extraction

Oil is extracted from the olive paste using traditional or modern methods. The traditional method involves applying mechanical pressure to the paste, whereas more advanced methods use centrifugation. Today, centrifugation is utilized more frequently due to its speed and higher efficiency.

Centrifugal Systems

Centrifugal systems operate in either two-phase or three-phase modes. Two-phase systems—which comprise about 98 percent of modern olive oil production—use centrifugal force to separate oil from the pomace and vegetable water. This technology not only increases yield but also ensures higher quality oil.

Refining and Storing Olive Oil

After extraction, the resulting oil usually contains impurities that must be removed. This is done using vertical centrifuges, and the clear oil is transferred to initial tanks. In these tanks, during a settling period of 24 to 48 hours, remaining suspended particles are removed, resulting in either refined or unrefined oil.

Olive Oil Packaging

The refined oil is then transferred to large tanks and sent to packaging. Modern packaging machines operate continuously and, with adjustable volume settings, fill containers very accurately.

To preserve quality, virgin and extra virgin olive oil are mostly packaged in glass bottles or metal cans, while more industrial oils may be packed in PET containers.

Difference Between Handmade and Industrial Olive Oil

Handmade olive oil is usually produced using traditional mechanical pressing, which requires lots of labor and more time. This method may yield oil with variable quality.

Conversely, industrial methods based on centrifugation use less manual labor and produce oil with lower acidity and higher quality. However, these methods require more energy consumption and generate less pomace as a result.
